		<description>Hi Chloe, No mine are not Gluten Free although I have many requests to make all different sorts of Pasta, including Gluten Free Products.
I have previously manufactured Gluten Free Gnocchi, but at the time(10 years ago), it was not that popular! I suppose I could still make it, although there would have to be a minimum order requirement to make it viable. Something like 80-100kg. That&#039;s pretty much why I don&#039;t hold stock.</description>

I&#039;m a Pasta Manufacturer in Sydney. Gnocchi are extremely hard to make consistently! My company Jiuliano Pasta and ultimately my family have been making Fresh Potato Gnocchi for over 30 years. The reason your Gnocchi stuck together was that the Gnocchi you were using did not have Fresh Potatos. Nearly all companies in Australia use Dehydrated Potato Flakes to make their Gnocchi. My Gnocchi do not stick together, break appart, not too hard, not to soft. Just right!
If you have to compare your Gnocchi, compare them with mine as they are a bench mark now after more than 10-12 years on the market.
